Jillsy's Kitchen ~ This Little Piggy went to Breakfast

if you're anything like me
 i get tired of the same old bacon and eggs
whenever i actually do have a breakfast

so last weekend i opened my fridge
grabbed some Smart Balance 
(since we're trying to stay away from too much butter)
salsa, swiss cheese, eggs and english muffins 
and ended up creating a breakfast masterpiece 
all within less than 10 minutes
REALLY ~  NO KIDDING!

Cheesy Salsa Egg Sandwich
(for two sandwiches)

melt the butter (doesn't show in photo)
crack two eggs on the side of the pan (threw away the shells)

pour in some salsa

throw in some swiss cheese

 a little pepper

mix it all up til the eggs are scrambled and the cheese is nice and gooey

toast two english muffins

and yum!

(I just made them again this morning for my brother and sister-in-law who have been visiting and they wolfed them down!)
